Easy Egg Southwest Breakfast Sandwich Recipe

Ingredients:

  • 2 large mushrooms
  • 1 bell pepper (red, green orange or yellow)
  • 1/3 cup spinach
  • 3 TB shredded cheese (cheddar or Monterrey Jack)
  • Coconut oil
  • 1 burger bun (gluten-free if desired)

Directions:

  1. Slice and cube mushrooms (save a few steps by using pre-sliced mushrooms)
  2. Dice bell pepper into cubes.
  3. Saute mushrooms, pepper and spinach for 5 minutes over medium-high heat in coconut oil.
  4. Add in 3 TB shredded cheese (cheddar or Monterrey jack work well) until just melted.
  5. Fry one egg either in the same skillet after sauteing veggies, or in a separate skillet while the veggies are cooking.
  6. Place sauteed veggies and cheese on bottom half of bun.
  7. Add 3 slices of tomato.
  8. Place fried egg on top of tomatoes and add top half of bun.
  9. Enjoy!
